During fermentation, microorganisms break down complex molecules, such as sugars or carbohydrates, through a series of chemical reactions. This process produces energy for the microorganisms and results in the formation of different end products, depending on the specific microorganism and the conditions under which fermentation occurs.

One of the most well-known types of fermentation is alcoholic fermentation, carried out by yeasts. In this process, yeasts convert sugars, such as glucose or sucrose, into ethanol (alcohol) and carbon dioxide. This type of fermentation is utilized in the production of alcoholic beverages, such as wine, beer, and spirits.

Lactic acid fermentation is another common form of fermentation. It is carried out by certain bacteria, such as Lactobacillus and Streptococcus species. In lactic acid fermentation, sugars are converted into lactic acid, which gives a sour taste to fermented foods like yogurt, sauerkraut, and pickles.
